DIY Chai Latte

Recreate this Indian spiced drink at home using some simple store cupboard ingredients. Black tea bags are infused with the warming spices of sweet cinnamon, fruity cardamom and fiery ginger, then topped with sweetened steamed milk. A perfect sweet pick-me-up on those cold winter evenings. Don’t fancy the sugar? Try sweetening it with agave nectar or honey instead.
Ingredients:
2 black teabags
10g fresh ginger, chopped
¼ tsp ground cinnamon, plus extra for dusting
2 cardamom pods, crushed
150ml skimmed milk
1 tbsp sugar, or to taste
Method
Step 1
Place the teabags, ginger, cinnamon, and cardamom pods into a heat-proof jug and add 300ml of boiling water. Allow to steep for 3 mins, then strain through a sieve.
Step 2
Heat the milk in a saucepan on the hob over a medium heat. Sweeten with sugar to taste. Whisk until frothy.
Step 3
Pour the tea mixture into your favourite cup and top with the frothed milk. Sprinkle it with cinnamon to serve.
