- Vegetable oil 75ml
- Cooked rice 250g
- Mixed salad leaves 80g
Cook
- Cook the rice according to the packet instructions, then set aside
- Butterfly the chicken breasts into two, place the whisked egg, flour and breadcrumbs into separate bowls
- Dip each piece of chicken first in the flour, then the egg and finally coat well in the breadcrumbs
- Open the coconut cream and scoop out into a saucepan with 100ml of water, add the katsu curry paste and bring to a simmer whilst mixing
- Heat oil in a frying pan and shallow fry your chicken until golden and cooked through
- Once fully cooked, slice and arrange on your plates alongside the rice, pouring the katsu sauce over the chicken and rice and serve with a side salad tossed in the salad dressing
